
With less than three thousand restaurants bestowed recognized and a bill to match, a meal from a Michelin-starred restaurant seems unattainable for most. However, in an inconspicuous booth in Mercado de San Anton lies Gustoo, a restaurant manned by two chefs who wanted to get away from the affectation of fine dining while still creating unique foods at a price that won’t break the bank.
As soon as we arrived, Michelin star chef Jorge Cal greeted us himself and right away a show unfolded in front of our eyes. While preparing our meal, he cracked jokes as we sampled the garnishes that he was adding to our food. Whether it was the king prawn filloa, blueberry marinated pork rib or the pickled union chicken sandwich, each dish took our gustatory system on a journey rife with unexpected flavors in every bite. So the next time that you’re in Madrid, take a ride on line 5 over to Chueca; Gustoo is somewhere you can’t miss!
